Minnesota Dairy Lab was born from a passion for learning and a deep curiosity about the art and science of ice cream.
Over my 20-year restaurant career, that spirit of experimentation followed me—from managing coffee shops to developing Koji fermentation programs and running production kitchens. Minnesota Dairy Lab is the result of a lifetime of tinkering and asking questions.
Today, Jessie and I, along with our team, make everything from scratch in our Minneapolis kitchen, pasteurizing our own base to stay in full control. In true lab fashion, we’re always learning, refining, and chasing that perfect scoop.
